Low-fat salad dressing!

I like to use this dressing with baby spinach!


* 1.5 Tbsp. olive oil
* 1.5 Tbsp. balsamic vinegar
* 1/4 cup ginger ale (yes! secret ingredient!)
* juice and zest from one lemon
* 1 tsp. dijon mustard
* 1 Tbsp. honey
* splash of apple cider vinegar (optional)


* whisk all ingredients in a bowl and toss with baby spinach.

Note: this recipe can easily be made vegan by omitting the honey.
